Chicken Tortilla Soup Recipe

Ingredients
1 cooked rotisserie chicken, meat removed from the bones and skin discarded
1 container chicken bone broth
1 can tomato sauce
1 can diced tomatoes
1 can black beans, drained and rinsed
1 can sweet corn, drained
Chopped onion
Minced garlic
Chopped green bell pepper
Olive oil
2 packets Siete mild taco seasoning
Fresh cilantro
Sliced avocado
Shredded cheese, optional
Tortilla chips, optional
Instructions
Remove the meat from the rotisserie chicken and place it in the bowl of a stand mixer. Using the paddle attachment, mix on low for just a few seconds until the chicken is shredded to your desired consistency. Set aside.
Heat a large pot or Dutch oven over medium heat. Add a drizzle of olive oil and the minced garlic. Sauté until the garlic becomes fragrant, about 30–60 seconds.
Add the chopped onion and green bell pepper and sauté for about 4–5 minutes, or until they begin to soften.
Pour in the chicken bone broth, tomato sauce, diced tomatoes, black beans, and corn. Add the taco seasoning and stir everything together until well combined.
Bring the soup to a gentle boil, then reduce the heat and allow it to simmer for about 10–15 minutes so the vegetables soften and the flavors come together.
Add the shredded rotisserie chicken to the pot and stir to combine. Continue simmering for another 5–10 minutes, just until the chicken is heated through.
Stir in fresh cilantro and simmer for another minute or two. Taste and adjust the seasoning if needed.
Ladle into bowls and top with sliced avocado and fresh cilantro as desired. Finish with shredded cheese and crushed tortilla chips.
