The BEST Chocolate Oatmeal Cookie recipe

The best no-bake chocolate oatmeal cookie recipe you’ll ever taste. This family-favorite chocolate oatmeal cookie recipe is the star of our family holidays and birthdays. It been passed down through our family for years and is one of those simple, nostalgic recipes that never disappoints. Rich chocolate flavor, chewy oats, and a quick no-bake method make them perfect for sharing with family & friends. Just don’t think about how much sugar & butter is in them, okay? Haha

Ingredients

  • 2 cups sugar

  • 1 stick butter

  • ½ cup milk

  • 4 Tbsp cocoa powder (high quality like Ghirardelli)

  • 2 cups quick-cooking rolled oats

  • 1 tsp vanilla extract

  • ⅓ cup creamy peanut butter

Optional Add-in:

  • ½ cup chopped pecans

Directions

1. In a large saucepan over low to medium heat, combine sugar, butter, milk, cocoa powder, and vanilla extract.

2. Bring mixture to a boil over medium heat. When the mixture JUST starts to boil, start your timer and boil for 1:50 to 2 minutes (this is key so the cookies aren’t too runny or too dry. Start your timer as soon as you see true bubbles / boiling. I like to give the mixture a stir with a whisk halfway through & also at the end of the 2 mins)

3. Remove pan from heat.

4. Stir in peanut butter and oats until well combined. Fold in pecans if using.

5. Drop spoonfuls onto parchment paper, wax paper, or silpat mats like I’m using in my video on Instagram here

6. Allow cookies to cool completely (30-45 mins) before serving.

Makes:

* 22-26 cookies using tablespoon-sized scoops

* 30–34 cookies using teaspoon-sized scoops
